Do you have any good [somewhat simple] chocolate recipes?

I’ve got a boatload of E.Guittard baking chocolate, (white, dark, semisweet, milk), and I don’t know what to do with it. But…I’m broke till next payday, so I’m trying to find stuff to make in the meantime with ingredients that I have on hand. I’ve got most of the essential baking ingredients, (flour, sugars, etc.), pecans, Vanilla Ice Cream
I’m just not in the mood to sift (!) through online recipe sites. Any ideas?

Lasagna?? What?! That’s not chocolate!
To be more specific, I have chocolate baking pieces that I want to use up. They’re like giant choco chips. Mostly intended for melting, but I can chop them up if need be.

This is an easy recipe, the amount doesn’t really matter in this recipe, guesstimating is totally o.k. You can use semi-sweet chocolate chips – 1 cup or 1 cup white chocolate chips for a sweeter flavor if you have a really sweet tooth, melt that on a double boiler or in the microwave 15 sec. at a time. When melted let cool for 10 min. While cooling set the temp. on the oven to about 150-200 degrees fahrenheit and toast nuts (optional) and 1/2 cup coconut on a baking sheet two min. at a time until the nuts are slightly roasted and the coconut is slightly crunchy. Then pour nuts and coconut flakes into the melted chocolate and form into balls. Place on a lined cookie sheet and then into the fridge until cool and firm. Then enjoy! These are really good and soooo easy! Makes about 10 balls in a batch, so double up if you have company!

EDIT: couldn’t believe nobody had any other recipes so here are a few others that I use that are really good!

Chocolate Oatmeal Cookies a.k.a -No Bake Cookies

1 stick of butter
2cups of sugar
3 tablespoons of cocoa
1/2 cup of milk
3 cups of oatmeal

Boil butter, sugar, cocoa, and milk for one minute. Then turn off the flame and add oatmeal. Mix well. Let cool for about 10-15 min. and then drop onto baking sheet covered with waxpaper. Chill in the fridge until hard. Peel off and enjoy!

Sugar Cookies

2 cups sugar
2 1/2 Cups all-purpose flour
1/2 tsp. baking powder
1/2 tsp. salt
14 tablespoons unsalted butter, softened
2 tsp. vanilla extract
2 large eggs

1.) Adjust an oven rack to the middle position and heat the oven to 350 degree. Spread the 1/2 cup of the sugar in a shallow dish for coating and set aside. In a separate bowl, whisk the flour, baking powder, and salt together and set aside.
2.) Beat the butter and remaining 1 1/2 cups sugar together in a large bowl using an electric mixer on med. speed until light and fluffy, 3-6 min. Beat in the vanilla, then add in the egges, one at a time, until combined, about 30 sec. scraping down the bowl and beaters as needed.
3.) Reduce the mixer speed to low and slowly mix in the flour mixture until combined, about 30 sec. Give the dough a final stir with a rubber spatula to make sure it it combined.
4.) Use wet hands to roll 2 tablespoons of dough at a time into balls, then roll in the sugar to coat. Lay the balls on two parchment-lined baking sheets, spaced about 2 inches apart. Flatten the cookies with the buttered bottom of a drinking glass, then sprinkle any of the remaining sugar over the flattened tops. Bake the cookies, one sheet at a time, until the edges are set and just beginning to brown but the centers are still soft and puffy, 10-12 min.
5.) Let the cookies cool on the baking sheet for 10 min., then serve warm or transfer to a wire rack and let cool completely.
